The same conditions that create such an artistic miracle make for a challenging oyster farm production environment. The cold and the current, even though they keep diseases at bay, also keep human beings at bay. This is a precarious environment, but each oyster is still handpicked off the bottom in its final year, sometimes with the snorkeler tied off to an island tree! (Seven mill wetsuits are still the norm in August). We will never be one of those one million oyster farms…we prefer to create a premium product in modest quantities.
The oysters start off in floating cages for two years; once big enough to fight off the star fish and crabs and dozens of other oyster loving sea creatures they then spend their final one to two years in the environment that God meant them to be in: tossed around on the ocean floor abreast of the island.
We are a family run farm by a Dad and his four kids with lots of help from friends an neighbors. Our proudest accomplishment - no one has been swept out to sea yet!
